Ingredients

  • 1/4 cup butter softened
  • 3/4 cup sugar
  • 1 large egg room temperature
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2/3 cup mashed ripe banana about 1 medium
  • 1/2 cup chopped pecans

Instructions

  • Preheat the air fryer to 325°F. Grease an 8-inch round baking pan that fits into your air fryer to prevent sticking.
  • In a large bowl, cream together the butter and sugar for 5-7 minutes until light and fluffy. Beat in the egg until fully incorporated.
  • In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, alternating with the mashed banana. Beat well after each addition until smooth.
  • Fold in the chopped pecans, ensuring they're evenly distributed throughout the batter.
  • Pour the batter into your prepared pan. Cover the pan tightly with foil to trap moisture. Cook in the air fryer for 25 minutes.
  • Remove the foil and continue cooking for another 8-10 minutes until a toothpick inserted in the center comes out clean.
  • Cool the banana bread in the pan on a wire rack for 10 minutes before gently removing it to cool completely. Slice and enjoy!
