Ingredients
  

  • 2 tablespoons flaxseed meal
  • 2 tablespoons Maskal Ivory Teff Flour
  • 1 tablespoon grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried parsley flakes
  • ½ teaspoon fine salt
  • ¼ teaspoon black pepper
  • 1 large egg
  • 1 lb. chicken tenders (or use boneless skinless chicken breasts, cut into 8–10 strips)
  • Avocado oil spray or olive oil cooking spray
  • Optional for serving: Honey mustard or any favorite dipping sauce

Instructions
 

  • Preheat your air fryer to 360℉ to ensure even cooking.
  • Mix the flaxseed meal, teff flour, Parmesan, garlic powder, onion powder, dried parsley, salt, and pepper in a shallow bowl.
  • In another bowl, whisk the egg to create an egg wash.
  • Coat each piece of chicken in the egg wash before dredging it in the seasoned flour mixture. Shake off excess coating for even cooking.
  • Prepare the air fryer basket by lining it with parchment paper or lightly misting it with cooking spray.
  • Arrange the coated chicken tenders in the air fryer basket, ensuring they don’t touch. Cook in batches if needed.
  • Spritz the chicken strips lightly with cooking oil spray for enhanced crispiness.
  • Air fry for 15-20 minutes, flipping halfway through for an even golden crust. Check they’ve reached an internal temperature of 165℉.
  • Transfer the cooked tenders to a cooling rack and allow them to rest before serving.
  • Pair with honey mustard or your favorite dipping sauce and enjoy!
