Ingredients

  • 1 cup finely ground almond flour, packed
  • 3 Tablespoons ghee, softened butter, or vegan butter (e.g., Earth Balance)
  • 3 Tablespoons maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 3 Tablespoons jam, homemade or store-bought

Instructions

  • Preheat: Set your oven to 350°F to ensure even baking.
  • Prepare the baking sheet: Line a baking sheet with parchment paper or a silicone baking mat for easy cleanup.
  • Mix the dough: In a small mixing bowl, combine almond flour, ghee or vegan butter, maple syrup, vanilla extract, and salt. Stir until everything comes together into a cohesive dough. The mixture might feel crumbly at first—just keep mixing and it'll turn smooth.
  • Shape the cookies: Scoop about 1 tablespoon of dough for each cookie and roll into balls. Place them on the prepared baking sheet, leaving about 1 inch of space between each one. Use your thumb or the back of a spoon to create a small indentation in the center of each cookie.
  • Fill with jam: Drop about 1/2 to 1 teaspoon of jam into the thumbprint of each cookie, being careful not to overfill.
  • Bake: Slide the tray into the oven and bake for 10-12 minutes, or until the edges are lightly golden brown.
  • Cool: Allow the cookies to cool on the baking sheet for 10 minutes, then transfer them to a wire rack to cool completely. This step helps them firm up for easy handling.
