Ingredients
  

  • 4 slices sweet onion
  • 4 salmon fillets (6 ounces each)
  • 3 tablespoons chili sauce
  • 1 tablespoon lime juice
  • 1 tablespoon sesame oil
  • 1 clove garlic, minced
  • 1 teaspoon mustard seed
  • 1 teaspoon minced fresh gingerroot
  • 1/2 teaspoon black sesame seeds
  • Chopped fresh mint
  • Grated lime zest

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • On a double thickness of heavy-duty aluminum foil, place each slice of sweet onion as a base.
  • Top each onion slice with a salmon fillet.
  • In a small bowl, whisk together chili sauce, lime juice, sesame oil, garlic, mustard seed, and fresh ginger. Spoon this mixture evenly over the salmon fillets.
  • Sprinkle black sesame seeds on top of each packet for added nuttiness and texture.
  • Fold the foil over the ingredients, crimping the edges tightly to seal and form a packet.
  • Place the packets on a baking sheet and bake for 15–20 minutes, or until the fish flakes easily with a fork.
  • Carefully open the packets—watch out for steam! Garnish with fresh mint and grated lime zest before serving.
