- 2 tablespoons red wine vinegar
- 1 clove garlic, minced (or more to taste)
- 1 large cucumber
- Salt to taste
- 1 (17.6-ounce) container full-fat plain Greek yogurt (such as FAGE TotalĀ®)
In a small bowl, stir together olive oil, vinegar, and minced garlic. Let the mixture sit while you prepare the cucumber to allow the flavors to meld.
Peel the cucumber and slice it in half lengthwise. Using a small spoon, scrape out the seeds to prevent excess water.
Grate the cucumber using a box grater and transfer to a sieve positioned over a bowl.
Sprinkle the grated cucumber with salt to draw out moisture. Press down gently with the palm of your hand, or use a clean tea towel to wring out any remaining liquid.
In a mixing bowl, combine the strained cucumber and Greek yogurt. Stir in the garlic mixture, mixing until thoroughly combined.
Taste and adjust salt if needed. For optimal flavor, chill the tzatziki in the refrigerator for a few hours before serving.
