Ingredients
  

  • 4 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 clove garlic, minced (or more to taste)
  • 1 large cucumber
  • Salt to taste
  • 1 (17.6-ounce) container full-fat plain Greek yogurt (such as FAGE TotalĀ®)

Instructions
 

  • In a small bowl, stir together olive oil, vinegar, and minced garlic. Let the mixture sit while you prepare the cucumber to allow the flavors to meld.
  • Peel the cucumber and slice it in half lengthwise. Using a small spoon, scrape out the seeds to prevent excess water.
  • Grate the cucumber using a box grater and transfer to a sieve positioned over a bowl.
  • Sprinkle the grated cucumber with salt to draw out moisture. Press down gently with the palm of your hand, or use a clean tea towel to wring out any remaining liquid.
  • In a mixing bowl, combine the strained cucumber and Greek yogurt. Stir in the garlic mixture, mixing until thoroughly combined.
  • Taste and adjust salt if needed. For optimal flavor, chill the tzatziki in the refrigerator for a few hours before serving.
