Ingredients

  • 2 ripe medium avocados, fleshed and diced
  • 4 ounces feta, block will yield best taste and texture
  • 3 medium Roma tomatoes, seeded and diced
  • 1/3 cup diced red onion
  • 2 cloves garlic, minced
  • 1/2 cup chopped parsley or cilantro
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon apple cider vinegar or white vinegar
  • 1/2 teaspoon fine sea salt, or to taste

Instructions

  • Prep the avocados: Halve, pit, and dice two medium avocados. Ensure they’re not overly soft to keep their shape in the dip.
  • Prepare the feta: Cut a 4-ounce block of feta into small cubes for even distribution.
  • Combine ingredients: In a medium bowl, gently mix the diced avocado, feta cubes, diced tomatoes, red onion, minced garlic, parsley or cilantro, olive oil, and vinegar.
  • Season: Sprinkle the mixture with fine sea salt to taste.
  • Fold carefully: Use a large spoon to gently fold the mixture, taking care not to mash the avocado.
  • Serve: Transfer to a serving bowl and enjoy with crackers, chips, flatbread, or fresh veggies.
