Ingredients

  • 1 medium avocado
  • 1/2 cup unsweetened almond milk
  • 2 Tablespoons lemon juice
  • 1 1/2 Tablespoons extra virgin olive oil
  • 1 clove garlic
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried parsley
  • 1 teaspoon dried dill
  • 1 teaspoon Dijon or stone-ground mustard
  • 1 teaspoon maple syrup
  • 2 Tablespoons fresh parsley, basil, or dill
  • 1/2 teaspoon ground pepper
  • 1/2 teaspoon sea salt

Instructions

  • In a high-powered blender, combine all ingredients. Blend until smooth and creamy, adding more almond milk one tablespoon at a time if the mixture seems too thick.
  • Taste and adjust seasoning, adding more salt, pepper, or lemon juice as needed to match your preferred flavor profile.
  • Transfer the dressing to a serving container. Use immediately or store in the refrigerator for up to 2 days in a sealed jar or airtight container.
  • Enjoy over fresh salads, as a dip for veggies, or drizzled over roasted vegetables or grilled proteins.
