Baked Feta Chicken

This baked feta chicken is a quick, Mediterranean-inspired dish with juicy, tender chicken breasts, bold creole seasoning, tangy feta cheese, and sweet grape tomatoes. Perfect for a high-protein, healthy dinner!

Ingredients
  

  • 1 lb boneless, skinless chicken breasts
  • 1 tablespoon creole seasoning
  • 2 tablespoons olive oil
  • 5 cloves garlic minced
  • ½ cup white wine
  • 10 oz grape tomatoes sliced in half
  • ½ cup feta cheese crumbled
  • Handful of fresh basil sliced into ribbons

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Sprinkle both sides of the chicken breasts with creole seasoning and set aside.
  • In a large cast iron skillet, heat the olive oil over medium heat. Once hot, add minced garlic and cook until fragrant, about 15 seconds.
  • Add the seasoned chicken breasts, searing each side for 3-5 minutes, or until golden brown.
  • Pour in the white wine to deglaze the skillet, scraping up any browned bits. Add the halved grape tomatoes around the chicken and sprinkle feta cheese evenly on top.
  • Transfer the skillet to the preheated oven and bake for 10 minutes, or until the internal temperature of the chicken reaches 165°F (74°C).
  • Garnish with fresh basil ribbons before serving. Enjoy!
