- 1 lb boneless, skinless chicken breasts
- 1 tablespoon creole seasoning
- 2 tablespoons olive oil
- 5 cloves garlic minced
- ½ cup white wine
- 10 oz grape tomatoes sliced in half
- ½ cup feta cheese crumbled
- Handful of fresh basil sliced into ribbons
Preheat your oven to 350°F (175°C).
Sprinkle both sides of the chicken breasts with creole seasoning and set aside.
In a large cast iron skillet, heat the olive oil over medium heat. Once hot, add minced garlic and cook until fragrant, about 15 seconds.
Add the seasoned chicken breasts, searing each side for 3-5 minutes, or until golden brown.
Pour in the white wine to deglaze the skillet, scraping up any browned bits. Add the halved grape tomatoes around the chicken and sprinkle feta cheese evenly on top.
Transfer the skillet to the preheated oven and bake for 10 minutes, or until the internal temperature of the chicken reaches 165°F (74°C).
Garnish with fresh basil ribbons before serving. Enjoy!
