- ¼ cup pure maple syrup
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- ½ teaspoon sea salt
- 2 cups non-dairy milk of choice
- 1 large egg, or 1 Tablespoon ground flaxseed
- 2 Tablespoons coconut oil, melted
- 2 teaspoons vanilla
- 2 ripe bananas, 1 mashed and 1 sliced
- 1 ½ cups fresh quartered strawberries, divided
- ¼ cup chocolate chips, divided

- Additional strawberries, bananas, and milk for serving
Preheat your oven to 375°F and lightly coat an 8-inch square baking dish with cooking spray.
In a large mixing bowl, combine oats, baking powder, cinnamon, and sea salt.
Whisk in non-dairy milk, maple syrup, egg (or flaxseed mixture), melted coconut oil, vanilla extract, and mashed banana until smooth.
Fold in 1 cup of strawberries, half the banana slices, and half the chocolate chips. Be gentle to avoid bruising the fruit.
Pour the batter into the prepared baking dish, spreading it evenly. Decorate the top with the remaining strawberries, banana slices, and chocolate chips.
Bake for 50-60 minutes, or until the edges are golden and the center is set. A slight softness from the berries is normal.
Let cool for a few minutes before slicing into portions. Serve warm with extra fresh fruit and a drizzle of milk if desired.
