- 1 cup old-fashioned rolled oats
- 1 overripe banana
- 2 eggs
- ½ cup unsweetened almond milk or milk of your choice
- 2 tablespoons honey or sweetener of choice
- 1 teaspoon baking powder
- ½ teaspoon vanilla extract
- ¼ teaspoon cinnamon
- ⅛ teaspoon salt
- ¼ cup mini chocolate chips
Preheat your oven to 350°F and lightly grease four ramekins or a small baking dish.
Add all ingredients except the chocolate chips to a high-speed blender. Blend until the mixture is completely smooth and creamy.
Divide the batter evenly between the ramekins and sprinkle chocolate chips on top.
Bake for 25 minutes, or until the tops are puffed and lightly golden. A toothpick inserted into the center should come out clean.
Cool for at least 5 minutes before serving. Enjoy warm for a soft, gooey texture or let it cool for a firmer bite.
