Ingredients

  • 1 cup old-fashioned rolled oats
  • 1 overripe banana
  • 2 eggs
  • ½ cup unsweetened almond milk or milk of your choice
  • 2 tablespoons honey or sweetener of choice
  • 1 teaspoon baking powder
  • ½ teaspoon vanilla extract
  • ¼ teaspoon cinnamon
  • teaspoon salt
  • ¼ cup mini chocolate chips

Instructions

  • Preheat your oven to 350°F and lightly grease four ramekins or a small baking dish.
  • Add all ingredients except the chocolate chips to a high-speed blender. Blend until the mixture is completely smooth and creamy.
  • Divide the batter evenly between the ramekins and sprinkle chocolate chips on top.
  • Bake for 25 minutes, or until the tops are puffed and lightly golden. A toothpick inserted into the center should come out clean.
  • Cool for at least 5 minutes before serving. Enjoy warm for a soft, gooey texture or let it cool for a firmer bite.
