- 1 medium-sized ripe banana, peeled
- 100 g (1 cup) rolled oats (check gluten-free if required)
- 2 tbsp honey
- 1 tbsp coconut oil (soft or melted)
- 50 g (1/2 cup) chocolate chips (check gluten-free if required)
- Pinch of salt
Preheat your oven to 170°C (325°F, fan).
Peel the banana and mash it in a medium-sized mixing bowl until smooth.
Add the oats, honey, and coconut oil to the bowl. Mix well until all the ingredients are fully combined.
Let the mixture rest on your countertop for 10 minutes. This allows the oats to soak up moisture and helps with shaping the cookies.
After resting, stir in the chocolate chips and a pinch of salt, reserving a few chips for garnish.
Scoop a tablespoon of the mixture into your hands, roll it into a ball, then flatten it into a thick, round disk about 1 cm thick.
Place the shaped cookies onto a baking tray lined with parchment paper. Repeat until all the mixture is used.
Bake in the preheated oven for 15 minutes or until the edges are lightly golden.
Remove the tray from the oven, sprinkle with reserved chocolate chips while warm, and allow the cookies to cool completely before serving.
