Ingredients
  

  • 1 cup finely shredded coconut
  • 1 ripe banana, mashed
  • ½ cup dark chocolate chips
  • 1 teaspoon coconut oil

Instructions
 

  • Preheat your oven to 350°F and line a baking sheet with parchment paper to prevent sticking.
  • In a mixing bowl, combine the mashed banana and shredded coconut until a dough forms.
  • Using a cookie scoop or spoon, divide the dough into 10 portions, rolling each into a ball and placing them evenly on the prepared baking sheet.
  • Flatten each ball into a cookie shape with your fingers, then use a straw or chopstick to punch a hole in the center for the classic Samoa look. Reshape as needed.
  • Bake for 20 minutes, or until the cookies are lightly golden on top. Remove from the oven and let them cool fully.
  • Meanwhile, melt the chocolate chips with coconut oil in a microwave-safe dish. Heat in 20-30 second intervals, stirring in between, until smooth.
  • Dip the bottom of each cooled cookie into the melted chocolate, then drizzle the remaining chocolate over the tops for a beautiful finish.
  • Place the cookies in the freezer or refrigerator for 10-15 minutes to let the chocolate harden.
  • Enjoy immediately or store for later!
