Ingredients
  

  • 1 large firm banana, peeled
  • 9 Natural Delights Pitted Medjool dates
  • 3 tablespoons creamy peanut butter or nut butter of your choice
  • 1/4 cup toppings of your choice (e.g., sesame seeds, shredded coconut, or chopped nuts)
  • 1/3 cup (~2 ounces) melted dark chocolate

Instructions
 

  • Line a flat surface or large cutting board with a sheet of wax paper.
  • Use a knife to make a slit in the dates without cutting through them. Open them and arrange into a 3x3 grid on the wax paper, ensuring enough overlap so they stick together.
  • Flatten the dates into a smooth sheet about 1/8 inch thick using a rolling pin or sturdy cup. Take your time to ensure even thickness.
  • Lift the top layer of wax paper and sprinkle your chosen toppings evenly over the date sheet. Replace the wax paper and gently roll over it to help toppings stick.
  • Flip the sheet over, remove the wax paper, and spread a thin, even layer of peanut butter across the surface.
  • Cut the sheet vertically into two equal-sized rectangles. Place the banana at one edge of the sheet and roll tightly, ensuring it’s fully encased in the date layer. Seal edges by pressing gently.
  • Repeat with the second sheet and banana.
  • Freeze the rolls for 30 minutes to make slicing easier.
  • To slice, warm a sharp knife under hot water, then dry. Cut each roll into eight even 1-inch pieces.
  • Serve with melted dark chocolate in a small bowl for dipping. Enjoy with chopsticks or your hands!
