- 250g / 8 oz beef tenderloin (thin piece, cut to even thickness)
- 300g / 10 oz sirloin steak (easier option)
- 1/2 tbsp vegetable or neutral-flavored oil
- 1/4 tsp cooking salt
- 1 tbsp cooking sake
- 2 tsp mirin
- 1 tbsp rice vinegar (or apple cider vinegar)
- 1 1/2 tbsp Japanese soy sauce
- 1 tbsp yuzu juice (or mix of lime and lemon juice)
- 2 tbsp grapeseed or light olive oil
- 3 cloves garlic, sliced
- Optional crispy potato straws or fried shallots for garnish
- 1 green onion, finely sliced
Prepare the beef: Rub the beef with oil and sprinkle evenly with salt. Preheat the oven to 130°C / 275°F and roast for 18–20 minutes until the internal temperature reaches 41°C / 105°F.
Sear: Heat a skillet until smoking hot. Sear the beef on each side for about 10 seconds. Let it cool for 30 minutes, then refrigerate uncovered for 2 hours to set.
Slicing: Use a sharp knife to thinly slice the beef to about 3–5mm thickness.
Make the yuzu dressing: Simmer sake and mirin in a saucepan for 1 minute. Let it cool, then stir in soy sauce, vinegar, and yuzu juice.
Infuse garlic oil: Gently heat garlic slices in oil until golden. Strain and save the garlic for another use.
Assemble and serve: Arrange beef slices on a plate, overlap slightly. Drizzle dressing and garlic oil over the top, then garnish with crispy potatoes or shallots and sliced green onions.
