Ingredients
  

  • 1/2 cup all-purpose flour
  • 1 large egg, lightly beaten
  • 3/4 cup seasoned bread crumbs
  • 3 tablespoons grated Parmesan cheese
  • 2 boneless skinless chicken breast halves (5 ounces each)
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 tablespoons olive oil
  • 2 Italian rolls, split
  • 2 slices provolone cheese
  • 1/3 cup marinara or other meatless pasta sauce, warmed

Instructions
 

  • Prepare separate shallow bowls: one with flour, one with the beaten egg, and one with a mixture of seasoned bread crumbs and Parmesan cheese.
  • Pound chicken breasts to 1/2-inch thickness for even cooking. Season both sides with salt and pepper.
  • Dredge each chicken breast in flour, shaking off the excess.
  • Dip coated chicken into the egg, then press into the bread crumb mixture to coat thoroughly.
  • Heat olive oil in a large skillet over medium heat. Add the chicken and cook until golden brown and fully cooked, about 4-5 minutes on each side.
  • Place a slice of provolone cheese on each chicken breast while it’s still in the skillet, allowing it to melt slightly.
  • Warm the marinara sauce and spoon onto the base of each Italian roll.
  • Assemble the sandwich by layering each chicken cutlet onto the sauced roll, topping with more marinara if desired.
