Ingredients
  

  • 1 cup instant couscous (Moroccan-style)
  • 1 cup boiling water
  • 1 cup grape or cherry tomatoes, diced
  • 1 cup English cucumber, diced
  • ½ red onion, diced
  • ½ cup fresh parsley, chopped
  • cup extra virgin olive oil
  • 3 tablespoons lemon juice
  • ½ teaspoon sea salt
  • ¼ teaspoon ground pepper
  • ½ cup crumbled feta cheese

Instructions
 

  • Bring 1 cup of water to a boil in a medium saucepan. Stir in the couscous, cover, and let it sit for 5-10 minutes until the water is fully absorbed.
  • Fluff the couscous with a fork to separate the grains, then transfer it to a large mixing bowl.
  • Add the diced tomatoes, cucumbers, red onion, and chopped parsley to the couscous and combine.
  • In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper to make the dressing.
  • Pour the dressing over the couscous mixture and gently toss to coat everything evenly.
  • Taste and adjust seasoning as needed. Refrigerate for at least 30 minutes if you prefer to enjoy it chilled.
  • Top with crumbled feta cheese right before serving.
