Cuisine Mediterranean
- 1 cup instant couscous (Moroccan-style)
- 1 cup boiling water
- 1 cup grape or cherry tomatoes, diced
- 1 cup English cucumber, diced
- ½ red onion, diced
- ½ cup fresh parsley, chopped
- ⅓ cup extra virgin olive oil
- 3 tablespoons lemon juice
- ½ teaspoon sea salt
- ¼ teaspoon ground pepper
- ½ cup crumbled feta cheese
Bring 1 cup of water to a boil in a medium saucepan. Stir in the couscous, cover, and let it sit for 5-10 minutes until the water is fully absorbed.
Fluff the couscous with a fork to separate the grains, then transfer it to a large mixing bowl.
Add the diced tomatoes, cucumbers, red onion, and chopped parsley to the couscous and combine.
In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper to make the dressing.
Pour the dressing over the couscous mixture and gently toss to coat everything evenly.
Taste and adjust seasoning as needed. Refrigerate for at least 30 minutes if you prefer to enjoy it chilled.
Top with crumbled feta cheese right before serving.
