- 1 kg / 2 lb ripe tomatoes (~7), cut into 8 wedges, core removed
- 1 cucumber (20cm/8" long), peeled and diced into 1cm / 1/2" cubes
- 1 red capsicum/bell pepper, cut into 1.5 cm / 1/2" cubes
- 2 garlic cloves, chopped
- 1/4 cup red onion, finely diced
- 1/4 cup extra virgin olive oil, plus extra for serving
- 1 1/2 tbsp sherry vinegar (sub white wine/champagne vinegar)
- 3/4 tsp cooking salt
- 1/2 tsp black pepper
- Crusty bread, for serving
- Cucumber, diced (optional garnish)
In a large bowl, combine all the ingredients. Cover the bowl and let the mixture marinate for 12-24 hours in the fridge. If short on time, marinate for at least 3 hours for best results. (Tip: Add 2 extra tablespoons of olive oil if you skip marinating)
Transfer the marinated mix into a blender or use a hand blender. Blend until smooth. For a silky texture, pass through a fine mesh strainer. For a slightly textured soup, skip straining.
Pour the blended gazpacho into bowls. Allow 15 minutes for the bubbles to dissipate, then gently stir.
Garnish with diced cucumber (optional) and a drizzle of olive oil. Serve this easy homemade gazpacho chilled with crusty bread. Enjoy!
