Ingredients
  

  • 2 Tablespoons olive oil
  • 1 yellow onion peeled and chopped
  • 3 large carrots peeled and cut into rounds
  • 1 cup celery chopped
  • 3 garlic cloves minced
  • 2 bay leaves
  • 1 teaspoon dried oregano
  • 2-3 fresh sage leaves or ½ teaspoon dried sage
  • 1 teaspoon fresh thyme or ½ teaspoon dried thyme
  • 2 sprigs fresh rosemary or 1 teaspoon dried rosemary
  • ½ teaspoon sea salt plus more as needed
  • ½ teaspoon black pepper
  • 8 cups low sodium turkey, chicken, or veggie broth
  • 1 cup pearl couscous
  • 4 cups shredded turkey, or chicken
  • 1 cup frozen peas
  • ¼ cup fresh curly parsley leaves finely chopped
  • 1 Tablespoon fresh lemon juice

Instructions
 

  • In a large pot or Dutch oven, warm olive oil over medium-high heat.
  • Add the onion, carrots, and celery. Sauté for about 7 minutes, stirring occasionally, until the vegetables start to soften and onions become translucent.
  • Add the garlic and sauté for 1-2 minutes until fragrant.
  • Stir in the bay leaves, oregano, sage, thyme, rosemary, salt, and pepper, coating the vegetables in the herbs.
  • Pour in the broth and bring to a boil over high heat.
  • Once the broth is boiling, add the pearl couscous. Lower the heat to medium and let the soup simmer, uncovered, for 15-20 minutes, stirring occasionally.
  • Stir in the shredded turkey, frozen peas, parsley, and lemon juice during the final 3-5 minutes of cooking.
  • Remove the bay leaves before serving. Adjust seasoning as desired and add extra broth if the soup thickens too much.
