In a large pot or Dutch oven, warm olive oil over medium-high heat.
Add the onion, carrots, and celery. Sauté for about 7 minutes, stirring occasionally, until the vegetables start to soften and onions become translucent.
Add the garlic and sauté for 1-2 minutes until fragrant.
Stir in the bay leaves, oregano, sage, thyme, rosemary, salt, and pepper, coating the vegetables in the herbs.
Pour in the broth and bring to a boil over high heat.
Once the broth is boiling, add the pearl couscous. Lower the heat to medium and let the soup simmer, uncovered, for 15-20 minutes, stirring occasionally.
Stir in the shredded turkey, frozen peas, parsley, and lemon juice during the final 3-5 minutes of cooking.
Remove the bay leaves before serving. Adjust seasoning as desired and add extra broth if the soup thickens too much.
