Blueberry Cobbler Overnight Oats
These blueberry cobbler overnight oats are a healthy and delicious breakfast option combining creamy oats with juicy blueberries and a sweet crumble topping, perfect for busy mornings or post-workout recovery.

- 1 cup old-fashioned rolled oats, not instant
- 1 1/2 cups unsweetened almond milk
- 4 Tablespoons vanilla protein powder (we use Nuzest)
- ½ cup fresh blueberries, plus more for topping
- ½ Tablespoon chia seeds
- 1 teaspoon vanilla extract
- 1 1/2 Tablespoons old-fashioned oats (for crumble)
- 1 Tablespoon oat flour
- 1 Tablespoon coconut sugar (or cane sugar)
- ½ Tablespoon coconut oil, melted
- 1 Tablespoon sliced almonds
- ¼ teaspoon cinnamon
Combine the oats: In a container, mix the rolled oats, almond milk, protein powder, blueberries, chia seeds, and vanilla extract until fully combined. Seal with a lid and refrigerate overnight or at least 6 hours.
Create the crumble topping: In a small bowl, combine 1 1/2 tablespoons oats, oat flour, coconut sugar, melted coconut oil, sliced almonds, and cinnamon. You can prepare this the night before and store it separately in the fridge.
Assemble and serve: In the morning, stir your overnight oats. You may wish to add an extra splash of almond milk for a looser texture. Divide the mixture into two servings, top each portion with the crumble, and garnish with extra blueberries. For an extra indulgent touch, drizzle almond butter over the top. Enjoy!
