- 1 bag Spinach & Arugula lettuce
- 1 heart Romaine lettuce
- 1/2 cup slivered almonds, toasted
- 4 oz goat cheese, crumbled
- 1 cup strawberries, sliced
- 1 cup blueberries
- 3/4 cup avocado or vegetable oil
- 1/2 cup blueberries (for vinaigrette)
- 2 tbsp white vinegar
- 1 tbsp balsamic vinegar
- 2 tbsp honey
Prepare the vinaigrette: Combine the vinaigrette ingredients (blueberries, oil, white vinegar, balsamic vinegar, honey) in a food processor. Blend until smooth and store in the refrigerator.
