Ingredients
  

  • 1 lb. lean ground beef or ground turkey
  • 8 oz leafy greens of choice (about 8 cups)
  • Burger toppings of choice: Pickles, onions, tomatoes, cheese, crisp-cooked bacon, etc.
  • Optional: Oven-roasted sweet potato wedges or frozen sweet potato fries
  • 2 medium sweet potatoes, washed and patted dry
  • 1 tablespoon avocado oil
  • ½ teaspoon garlic powder
  • ½ teaspoon chili powder
  • Coarse salt and chopped parsley for sprinkling
  • ½ cup mayonnaise
  • 2 tablespoons no-sugar-added ketchup
  • 2 tablespoons diced pickles (or pickle relish)
  • 2 teaspoons Dijon or yellow mustard
  • 1 teaspoon white vinegar or apple cider vinegar
  • ½ teaspoon onion powder
  • Fine salt and black pepper, to taste

Instructions
 

  • If using frozen sweet potato fries, skip steps 1-4.
  • Preheat your oven to 400°F and line a large baking sheet with parchment paper.
  • Slice the sweet potatoes into wedges, about ½-inch thick, leaving the skins on for extra fiber.
  • Place the wedges on the baking sheet and toss them with avocado oil, garlic powder, and chili powder. Spread them out in a single layer.
  • Bake for 25-35 minutes, flipping halfway, until the edges are crispy and golden brown.
  • While the sweet potatoes bake, prepare the special sauce by whisking together mayonnaise, ketchup, pickles, mustard, vinegar, and onion powder. Adjust salt and pepper to taste.
  • Heat a skillet over medium-high heat. Brown the lean ground beef or turkey, breaking it up with a spoon, until fully cooked. Season with salt and pepper.
  • Assemble your burger bowls: Start with a base of leafy greens, add a generous scoop of the meat, and layer on toppings like tomatoes, onions, pickles, bacon, or cheese.
  • Serve with sweet potato wedges on the side—don't forget a drizzle of that irresistible special sauce!
