This burrito bake is an easy burrito bake recipe with layers of crescent roll crust, seasoned beef, refried beans, and cheese, making it a perfect baked burrito casserole for weeknight dinners.

Ingredients
  

  • 1 pound ground beef
  • 1 can (16 ounces) refried beans
  • 1/4 cup chopped onion
  • 1 envelope taco seasoning
  • 1 tube (8 ounces) refrigerated crescent rolls
  • 1 to 2 cups shredded cheddar cheese
  • 1 to 2 cups shredded part-skim mozzarella cheese
  • optional toppings: Chopped green pepper, shredded lettuce, chopped tomatoes, and sliced ripe olives

Instructions
 

  • Preheat your oven to 350°F and lightly grease a 13x9-inch baking dish.
  • In a large skillet, cook and crumble the ground beef over medium heat until it's no longer pink, about 8 minutes. Drain any excess fat.
  • Stir in the refried beans, chopped onion, and taco seasoning, mixing until well combined. Heat through for 2-3 minutes and set aside.
  • Unroll the crescent roll dough and press it evenly into the bottom and slightly up the sides of the prepared baking dish, ensuring the seams are sealed.
  • Spread the beef mixture over the crescent dough, creating an even layer.
  • Sprinkle both the shredded cheddar and mozzarella cheeses generously over the top.
  • Bake the casserole uncovered for about 30 minutes, or until the crust is golden brown and the cheese is bubbly.
  • Once out of the oven, let it cool slightly for 5 minutes. Garnish with optional toppings like chopped lettuce, ripe olives, or diced tomatoes for a fresh finish, if desired.
