These California roll wraps combine creamy avocado, crunchy vegetables, lean crabmeat, and a tangy wasabi mayonnaise in a whole wheat tortilla for a healthy California roll recipe that's easy and customizable.

Ingredients
  

  • 1/2 cup wasabi mayonnaise
  • 6 whole wheat tortillas (8 inches), warmed
  • 2 packages (8 ounces each) imitation crabmeat
  • 1 medium ripe avocado, peeled and thinly sliced
  • 1-1/2 cups julienned peeled jicama
  • 1 medium sweet red pepper, julienned
  • 1 small cucumber, seeded and julienned
  • 3/4 cup bean sprouts

Instructions
 

  • Divide the wasabi mayonnaise evenly among the 6 tortillas and spread to within 1/2 inch of edges.
  • Layer each tortilla with crabmeat, avocado slices, julienned jicama, red pepper, cucumber, and bean sprouts.
  • Carefully roll each tortilla up tightly. Use a sharp knife to cut each wrap in half, if desired, for easy serving.

Notes

If you can't find wasabi mayo or prefer a milder flavor, substitute with plain or flavored mayonnaise. For meal prep, toss avocado slices with lemon juice to prevent browning, and wrap assembled tortillas in plastic wrap to keep them fresh.
