Ingredients
  

  • 3 heirloom or vine-ripened tomatoes, cut into ¼-inch slices
  • ½ teaspoon sugar
  • ½ teaspoon salt, divided
  • 1 pound fresh mozzarella, cut into ¼-inch slices
  • Freshly ground black pepper, to taste
  • Extra virgin olive oil, for drizzling
  • Balsamic glaze, for drizzling
  • ¼ cup roughly chopped fresh basil (plus sprigs for garnish)

Instructions
 

  • Arrange the tomato slices on a cutting board. Sprinkle with sugar and ¼ teaspoon of salt, and let sit for about 5 minutes to enhance their natural sweetness.
  • On a platter, alternate layers of sliced tomatoes and fresh mozzarella.
  • Sprinkle the remaining ¼ teaspoon of salt and a few cracks of fresh black pepper over the assembled salad.
  • Drizzle with 1 tablespoon of olive oil, followed by a generous drizzle of balsamic glaze—just enough to coat but not overwhelm.
  • Scatter roughly chopped basil on top, allowing its fragrance to infuse the dish.
  • Finish with basil sprigs as garnish for a picturesque presentation.
