- 1 cup nonfat Greek yogurt (or Skyr)
- ½ scoop vanilla protein powder
- 1 medium banana, sliced
- 1 teaspoon coconut oil or butter
- 2 teaspoons maple syrup (optional)
- ¼ teaspoon cinnamon
- Pinch salt
- 1 tablespoon chopped walnuts or pecans
- Drizzle peanut butter
- Sprinkle flaky salt
Heat a small skillet over medium heat. Add the coconut oil, maple syrup, and cinnamon, letting the mixture warm until aromatic.
Add the banana slices to the skillet and cook for 2–3 minutes per side until they develop a golden, caramelized surface. Remove the bananas and set aside.
In the same pan, toast the walnuts for 1 minute until fragrant. Take care not to let them burn.
While the bananas cook, stir together the Greek yogurt and vanilla protein powder until smooth. If it feels too thick, add a splash of milk to loosen it.
Assemble your bowl: Pour the yogurt into a serving bowl, arrange the caramelized bananas on top, sprinkle with toasted walnuts, drizzle peanut butter, and finish with flaky salt.
