- 8 cups sliced carrots
- 2 medium onions, sliced
- 5 tablespoons butter, divided
- 1 can (10-3/4 ounces) condensed cream of celery soup, undiluted
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup shredded cheddar cheese
- 1 cup seasoned croutons
Preheat your oven to 350°F. Grease a 13x9-inch baking dish and set it aside.
Place the sliced carrots in a saucepan and cover them with water. Bring to a boil and cook until crisp-tender, approximately 8-10 minutes. Drain fully.
While the carrots are cooking, heat 3 tablespoons of butter in a skillet over medium heat. Add the sliced onions and sauté until tender, about 5-7 minutes.
Stir the condensed cream of celery soup, salt, pepper, and cheddar cheese into the onions. Mix until smooth and well-combined.
Combine the cooked carrots with the onion mixture in the skillet, then transfer everything to your prepared baking dish. Spread the mixture evenly.
Top the dish with seasoned croutons. Melt the remaining 2 tablespoons butter and drizzle over the croutons for extra crispness.
Bake uncovered for 20-25 minutes, or until the top is golden and bubbly. Serve warm and enjoy!
