Ingredients
  

  • 3 medium zucchini sliced into thin rounds
  • 2 cups cooked chicken breast shredded or diced
  • 1 cup marinara sauce low-sugar option for lighter dish
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt or to taste
  • ¼ teaspoon black pepper
  • Olive oil for greasing the pan

Instructions
 

Prepare the zucchini

  • Preheat your oven to 375°F. Lightly grease a 9x13-inch baking dish with olive oil. Lay the zucchini slices in a single layer across the bottom of the dish. Sprinkle with a pinch of salt and pepper.

Add the chicken and sauce

  • Spread the shredded or diced chicken evenly over the zucchini. Spoon the marinara sauce on top, making sure to cover the chicken for even flavor.

Create the cheesy topping

  • In a small bowl, mix the shredded mozzarella, Parmesan cheese, garlic powder, and Italian seasoning. Sprinkle the cheese mixture evenly over the dish.

Bake to perfection

  • Place the dish in the oven and bake for 30–35 minutes, or until the cheese is golden and bubbly, and the zucchini is tender when pierced with a fork.

Let it rest and serve

  • Remove from the oven and let the dish cool for 5 minutes before serving. This helps the layers set and makes it easier to scoop portions.
