Ingredients
  

  • 1 zucchini grated
  • 1 pound ground chicken breasts
  • 1 large egg
  • 1/3 cup coconut flour, almond flour, or all-purpose flour
  • 1 cup finely shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • 2 green onions thinly sliced
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon lemon juice
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste
  • 3 tablespoons vegetable oil
  • Sliced green onions and chopped parsley for garnish (optional)

Instructions
 

  • Grate the zucchini and toss it with 1/2 teaspoon of salt. Let it sit for 10 minutes. Use a kitchen towel to wring out all the excess water.
  • In a large mixing bowl, combine the ground chicken, shredded zucchini, egg, mozzarella, parmesan, flour, lemon juice, green onions, parsley, and seasonings. Mix until fully incorporated.
  • Heat 3 tablespoons of vegetable oil in a non-stick pan over medium heat. Scoop out about 1/4 cup of the mixture, flatten slightly, and gently place into the pan.
  • Cook the fritters for 4-6 minutes on each side, or until they’re golden brown and cooked through. Avoid overcrowding the pan.
  • Repeat with the remaining mixture, adding more oil if needed. Garnish with green onions and parsley, and serve hot with your favorite dip.
