- 1 zucchini grated
- 1 pound ground chicken breasts
- 1 large egg
- 1/3 cup coconut flour, almond flour, or all-purpose flour
- 1 cup finely shredded mozzarella cheese
- 1/4 cup grated parmesan cheese
- 2 green onions thinly sliced
- 1 tablespoon chopped fresh parsley
- 1 tablespoon lemon juice
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- Salt and pepper, to taste
- 3 tablespoons vegetable oil
- Sliced green onions and chopped parsley for garnish (optional)
Grate the zucchini and toss it with 1/2 teaspoon of salt. Let it sit for 10 minutes. Use a kitchen towel to wring out all the excess water.
In a large mixing bowl, combine the ground chicken, shredded zucchini, egg, mozzarella, parmesan, flour, lemon juice, green onions, parsley, and seasonings. Mix until fully incorporated.
Heat 3 tablespoons of vegetable oil in a non-stick pan over medium heat. Scoop out about 1/4 cup of the mixture, flatten slightly, and gently place into the pan.
Cook the fritters for 4-6 minutes on each side, or until they’re golden brown and cooked through. Avoid overcrowding the pan.
Repeat with the remaining mixture, adding more oil if needed. Garnish with green onions and parsley, and serve hot with your favorite dip.
