- 1.5 cups raw almonds, roughly chopped
- 1 cup raw pecans, roughly chopped
- 1 cup unsweetened coconut flakes
- 1/2 cup Garden of Life Organic Ground Flaxseed
- 1/2 teaspoon cinnamon
- 1 medium banana, mashed
- 1/4 cup Garden of Life Organic Extra Virgin Coconut Oil, melted and cooled
- 2 tablespoons hot water
- 1/3 cup dark chocolate chips (code RACHL for free shipping)
Preheat your oven to 350°F and prepare a large baking sheet with parchment paper.
In a large bowl, combine the almonds, pecans, coconut flakes, flaxseed, and cinnamon. Stir until evenly mixed.
In a separate small bowl, mash the banana and mix it with the melted coconut oil and hot water. Pour this mixture over the dry ingredients and stir until everything is well coated.
Spread the mixture onto the prepared baking sheet, pressing it down into a compact rectangle to encourage clusters to form.
Bake for 15 minutes, then rotate the pan and bake for another 15 minutes. Look for a lightly golden color.
Remove from the oven and let the granola cool for 5 minutes. Toss the chocolate chips on top while it’s still warm so they slightly melt.
Once cooled, break the granola into clusters and enjoy!
