Ingredients

  • 1.5 lbs boneless skinless chicken breast, cut into 1-inch chunks
  • 2 tablespoons water
  • 2 tablespoons lemon juice
  • 1 tablespoon avocado oil or olive oil
  • 1 teaspoon sea salt
  • 1 teaspoon honey or maple syrup
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon dried parsley
  • 1/2 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper

Instructions

  • Add the chicken chunks, water, lemon juice, oil, salt, honey (or maple syrup), garlic powder, parsley, paprika, onion powder, and black pepper to a large bowl or zip-top bag.
  • Mix thoroughly to ensure the chicken is evenly coated with the marinade. Cover and refrigerate for at least 30 minutes, or up to 6 hours for deeper flavor.
  • Remove the chicken from the marinade and drain off any excess liquid. Discard used marinade.
  • Heat a grill or grill pan over medium-high heat, lightly greasing the surface with cooking spray or oil.
  • Arrange the marinated chicken pieces in a single layer on the grill. Cook for 3–4 minutes per side, or until the chicken is cooked through and its internal temperature reaches 165°F.
  • Allow the grilled nuggets to rest for 2–3 minutes to lock in the juices before serving.
