Ingredients
  

  • 1 box Goya Spanish-Style Yellow Rice
  • 2.25 cups water
  • 2 lbs chicken breast
  • 3 bell peppers, thinly sliced
  • 2 onions, thinly sliced
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tsp paprika
  • 1 tsp kosher salt
  • 1/4 tsp cayenne pepper
  • 1/4 cup fresh cilantro, chopped

Instructions
 

  • Preheat your oven to 375°F.
  • Pour the rice into the bottom of a baking dish and add the water, stirring to combine.
  • Slice the bell peppers and onions into thin strips.
  • Cut the chicken breasts into approximately 4 pieces each to help them cook evenly.
  • In a large mixing bowl, combine the chicken, bell peppers, and onions.
  • In a small bowl, mix all the spices together, then sprinkle evenly over the chicken and vegetables.
  • Use your hands to toss the chicken, peppers, and onions in the spice blend until everything is well-coated.
  • Layer the seasoned chicken and vegetables on top of the rice in the baking dish.
  • Cover the dish tightly with foil and bake for 1 hour.
  • Remove the foil, garnish with fresh cilantro, and serve warm.
