Ingredients
  

  • ¾ cup (4 ounces) cooked, shredded, and cooled chicken
  • 1 cup (4 ounces) shredded Cheddar, Mexican blend, pepper Jack, or Monterey Jack cheese
  • ½ teaspoon chili powder
  • 2 (8- to 10-inch) flour tortillas
  • Optional toppings: hot sauce, crema, salsa, guacamole

Instructions
 

  • Heat a large nonstick skillet over medium heat.
  • In a medium-sized bowl, toss the chicken, cheese, and chili powder until evenly combined. This ensures every bite is full of flavor.
  • Sprinkle half the filling across one side of each tortilla, then fold the tortillas in half to create a half-moon shape.
  • Place the folded tortillas onto the heated skillet. Arrange them in a circle to fit both.
  • Cook for 1-3 minutes on each side, pressing down gently with a spatula to ensure even browning. You'll know they're ready when the cheese is melted and the tortillas turn golden and crisp.
  • Transfer to a cutting board, let rest for 30 seconds, and slice into wedges. Serve with your favorite toppings like guacamole or salsa.
