Cuisine Mexican
- ¾ cup (4 ounces) cooked, shredded, and cooled chicken
- 1 cup (4 ounces) shredded Cheddar, Mexican blend, pepper Jack, or Monterey Jack cheese
- ½ teaspoon chili powder
- 2 (8- to 10-inch) flour tortillas
- Optional toppings: hot sauce, crema, salsa, guacamole
Heat a large nonstick skillet over medium heat.
In a medium-sized bowl, toss the chicken, cheese, and chili powder until evenly combined. This ensures every bite is full of flavor.
Sprinkle half the filling across one side of each tortilla, then fold the tortillas in half to create a half-moon shape.
Place the folded tortillas onto the heated skillet. Arrange them in a circle to fit both.
Cook for 1-3 minutes on each side, pressing down gently with a spatula to ensure even browning. You'll know they're ready when the cheese is melted and the tortillas turn golden and crisp.
Transfer to a cutting board, let rest for 30 seconds, and slice into wedges. Serve with your favorite toppings like guacamole or salsa.
