Chicken Tzatziki Skewers

Ingredients
  

  • 1/4 cup extra virgin olive oil
  • 1 shallot, chopped
  • 4 cloves garlic, chopped
  • 2 teaspoons dried oregano
  • 1 teaspoon chipotle chili powder
  • 1 teaspoon honey
  • 1-3 tablespoons harissa sauce (or hot sauce)
  • 1 tablespoon lemon zest
  • Salt and black pepper, to taste
  • 1 1/2 pounds chicken breasts, cut into bite-sized chunks
  • 1-2 cups tzatziki sauce
  • 1/2 cup garlic tahini (see notes)
  • 4 russet potatoes, cut into 1/4-inch matchsticks
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper
  • 1/2 cup mixed herbs (dill, basil, parsley)
  • 1 teaspoon lemon zest
  • 1 clove garlic, grated
  • 2 tablespoons toasted sesame seeds
  • 1/2 cup crumbled feta cheese

Instructions
 

  • In a bowl, whisk together olive oil, shallot, garlic, oregano, chili powder, honey, harissa sauce, lemon zest, salt, and pepper. Add chicken and toss to coat. Let sit for 10 minutes if possible to absorb flavors.
  • Preheat oven to 450°F. Line a baking sheet with parchment paper.
  • Thread chicken onto skewers and place on the prepared baking sheet. Bake for 20-25 minutes until cooked through and lightly charred, turning halfway.
  • While chicken bakes, toss potatoes with olive oil, garlic powder, cayenne, and black pepper. Spread on a second baking sheet in an even layer.
  • Bake potatoes for 30 minutes, flipping halfway. They should be golden and crisp.
  • Combine herbs, lemon zest, garlic, sesame seeds, and feta in a bowl. Sprinkle over fries right after baking to coat evenly.
  • Serve skewers hot with tzatziki sauce, garlic tahini, and feta fries. Enjoy!

Notes

Feel free to experiment with your favorite herbs or substitute sweet potatoes for added fiber.
