These chicken tzatziki skewers are a healthy, protein-packed meal featuring flavorful marinated chicken served with creamy tzatziki sauce and crispy feta fries for a Mediterranean-inspired delight.
1 1/2poundschicken breasts, cut into bite-sized chunks
1-2cupstzatziki sauce
1/2cupgarlic tahini(see notes)
4russet potatoes, cut into 1/4-inch matchsticks
2tablespoonsextra virgin olive oil
1teaspoongarlic powder
1/4teaspooncayenne pepper
1/2cupmixed herbs (dill, basil, parsley)
1teaspoonlemon zest
1clovegarlic, grated
2tablespoonstoasted sesame seeds
1/2cupcrumbled feta cheese
Instructions
In a bowl, whisk together olive oil, shallot, garlic, oregano, chili powder, honey, harissa sauce, lemon zest, salt, and pepper. Add chicken and toss to coat. Let sit for 10 minutes if possible to absorb flavors.
Preheat oven to 450°F. Line a baking sheet with parchment paper.
Thread chicken onto skewers and place on the prepared baking sheet. Bake for 20-25 minutes until cooked through and lightly charred, turning halfway.
While chicken bakes, toss potatoes with olive oil, garlic powder, cayenne, and black pepper. Spread on a second baking sheet in an even layer.
Bake potatoes for 30 minutes, flipping halfway. They should be golden and crisp.
Combine herbs, lemon zest, garlic, sesame seeds, and feta in a bowl. Sprinkle over fries right after baking to coat evenly.
Serve skewers hot with tzatziki sauce, garlic tahini, and feta fries. Enjoy!
