Prepare the chicken: If you haven’t already grilled your chicken, do so now. Season with salt and pepper, then grill until the internal temperature reaches 165°F. Let it cool and chop into chunks.
Chop and mix: In a large mixing bowl, combine the chopped chicken, apple, celery, red onion, and walnuts.
