Chicken Waldorf Salad

Ingredients
  

  • 2 cups chopped grilled chicken breast
  • 1 medium apple, diced
  • 2 stalks celery, diced
  • 1/4 cup diced red onion
  • 2 Tablespoons chopped walnuts, toasted (optional)
  • 1/4 cup mayonnaise
  • 1/4 cup plain Greek yogurt
  • 1 Tablespoon lemon juice
  • 1 1/2 teaspoons Dijon mustard
  • to taste Sea salt and black pepper
  • Fresh thyme, for garnish (optional)

Instructions
 

  • Prepare the chicken: If you haven’t already grilled your chicken, do so now. Season with salt and pepper, then grill until the internal temperature reaches 165°F. Let it cool and chop into chunks.
  • Chop and mix: In a large mixing bowl, combine the chopped chicken, apple, celery, red onion, and walnuts.
  • Whisk the dressing: In a small bowl, whisk together the mayonnaise, Greek yogurt, lemon juice, and Dijon mustard until smooth. Season with salt and pepper to taste.
  • Toss to coat: Pour the dressing over the chicken mixture. Gently toss until everything is evenly coated.
  • Garnish and serve: Sprinkle fresh thyme on top, if using. Serve immediately or chill briefly for a cooler salad.

Notes

You can make this salad vegan by swapping chicken for chickpeas or tofu, and using a vegan mayo and yogurt substitute. Other modifications include omitting the walnuts for a nut-free version or replacing them with sunflower seeds.
