- 1 cup chickpea flour
- 1/2 cup oat flour
- 1 tsp baking soda
- 1/4 tsp salt
- 1/2 tsp cinnamon
- 1/4 cup brown sugar or coconut sugar
- 3 medium ripe bananas, mashed
- 2 large eggs
- 1 tsp apple cider vinegar
- 2 tsp vanilla extract
- 2 tbsp coconut oil, melted and cooled (or butter)
- 1 cup strawberries, diced (about 6–7 large strawberries)
Preheat your oven to 375°F and grease a muffin tin or line with baking cups.
In a medium bowl, whisk together chickpea flour, oat flour, baking soda, salt, cinnamon, and sugar.
In a larger bowl, combine mashed bananas, eggs, apple cider vinegar, vanilla extract, and melted coconut oil until smooth.
