Ingredients

  • 1 cup unsweetened vanilla almond milk
  • 6 tablespoons chia seeds
  • 1/4 cup maple syrup, honey, or sweetener of choice*
  • 2 tablespoons cocoa powder
  • 1/8 teaspoon salt
  • 1 teaspoon vanilla extract
  • Toppings of choice fresh berries, chocolate chips, nuts

Instructions

  • Add almond milk, chia seeds, maple syrup, cocoa powder, vanilla, and salt into a high-powered blender.
  • Start at a low blender setting and gradually increase to high. Blend until the chia seeds are nearly undetectable and the mixture is smooth, scraping down the sides as needed.
  • If you prefer, refrigerate the mousse for 3–4 hours to let it fully chill and thicken. Otherwise, it’s ready to enjoy immediately.
  • Top with your favorite berries, chocolate chips, or nuts, and serve!

Notes

Without a high-powered blender, the pudding may retain a tapioca-like texture. For a low-sugar option, choose monk fruit or stevia instead of maple syrup.
