Ingredients
  

  • 1-1/4 cups pitted medjool dates roughly chopped
  • 3 ounces 60% bittersweet chocolate coarsely chopped
  • 1/4 cup dried unsweetened tart cherries chopped
  • 1/4 cup deluxe mixed nuts coarsely chopped
  • 3 tbsp unsweetened coconut flakes
  • 3 tbsp sunflower kernels
  • 1-1/2 tsp olive oil
  • 1 tsp vanilla extract

Instructions
 

  • Place the dates, chocolate, and cherries in a food processor. Process for approximately 1 minute until finely chopped. The mixture should resemble sticky crumbs.
  • Add the mixed nuts, coconut flakes, and sunflower kernels. Pulse until everything is blended but still has texture.
  • Add the olive oil and vanilla extract. Process again until the mixture starts to clump together into a cohesive dough.
  • Using your hands, roll the mixture into 12 evenly sized balls.
  • Refrigerate the balls, covered, for at least 30 minutes to firm up before serving.
  • Store in an airtight container in the refrigerator for up to 1 week—or freeze for up to 1 month.
