Chocolate Peanut Butter Banana Bites

- 3 ripe bananas
- 1/3 cup natural peanut butter
- 1/2 cup dark chocolate chips
- 2 teaspoons coconut oil
Peel and slice the bananas into rounds approximately 1/4 inch thick.
Line a platter or small baking sheet with parchment paper.
Add about 1/2 teaspoon of peanut butter onto a banana slice, then top with another banana slice to create a sandwich.
Repeat until you’ve used all the banana slices, forming approximately 30 bite-sized sandwiches. Place them on the prepared platter.
Freeze the banana sandwiches for 1 hour to firm up.
Melt the dark chocolate and coconut oil in a microwave-safe bowl by microwaving for 1 minute. Stir, then continue in 30-second increments until fully melted (1-2 minutes total).
Take out one platter of frozen banana bites. Dip each bite halfway into the melted chocolate, letting the excess drip off before placing it back on the parchment-lined platter.
Repeat the dipping process with the remaining platter of frozen bites.
Return all dipped bites to the freezer for about 15 minutes or until the chocolate hardens fully.
Enjoy immediately or transfer to an airtight container for up to 2 months in the freezer. Let bites thaw for 5 minutes before eating if they’ve been stored long-term.
