Ingredients

  • 3 ripe bananas
  • 1/3 cup natural peanut butter
  • 1/2 cup dark chocolate chips
  • 2 teaspoons coconut oil

Instructions

  • Peel and slice the bananas into rounds approximately 1/4 inch thick.
  • Line a platter or small baking sheet with parchment paper.
  • Add about 1/2 teaspoon of peanut butter onto a banana slice, then top with another banana slice to create a sandwich.
  • Repeat until you’ve used all the banana slices, forming approximately 30 bite-sized sandwiches. Place them on the prepared platter.
  • Freeze the banana sandwiches for 1 hour to firm up.
  • Melt the dark chocolate and coconut oil in a microwave-safe bowl by microwaving for 1 minute. Stir, then continue in 30-second increments until fully melted (1-2 minutes total).
  • Take out one platter of frozen banana bites. Dip each bite halfway into the melted chocolate, letting the excess drip off before placing it back on the parchment-lined platter.
  • Repeat the dipping process with the remaining platter of frozen bites.
  • Return all dipped bites to the freezer for about 15 minutes or until the chocolate hardens fully.
  • Enjoy immediately or transfer to an airtight container for up to 2 months in the freezer. Let bites thaw for 5 minutes before eating if they’ve been stored long-term.
