Preheat your oven to 180°C and lightly spray six ramekins with oil.
In a large mixing bowl, whisk together almond meal, baking powder, half of the cocoa powder, prunes, and half of the coconut sugar.
In a separate bowl, whisk the egg, skim milk, olive oil, and vanilla extract, and gently fold it into the dry ingredients until combined.
Evenly divide the batter into the prepared ramekins, filling them about two-thirds full.
Mix the remaining coconut sugar and cocoa powder in a small bowl, then sprinkle it over the batter in each ramekin.
Slowly pour around 2 tablespoons of boiling water over each pudding, letting it flow over the back of a large spoon to distribute evenly.
Place all ramekins on a baking sheet and bake for 20 minutes. The puddings should have set tops with a molten, saucy texture underneath.
Let cool slightly before serving. Top with a dollop of yogurt, a handful of frozen raspberries, and a dusting of cocoa powder for an extra touch.
