- 1 cup 4% milkfat, small-curd cottage cheese (we use Good Culture 4% Cottage Cheese)
- ¾ cup organic strawberries, chopped
- 3 tablespoons allulose sweetener
- 1 cup sugar-free, semi-sweet chocolate chips (we use Lily’s Semi-Sweet Chocolate Baking Chips)
- 1 tablespoon coconut oil
Line a baking sheet with parchment paper to prevent sticking later on.
In a food processor, blend the cottage cheese and allulose until completely smooth. The mixture should be creamy without lumps.
Add chopped strawberries and pulse briefly to combine. Aim for chunky strawberry pieces scattered throughout for texture.
Use a spoon to scoop the mixture into mounds on the prepared baking sheet. Leave space between each cluster.
Place the baking sheet in the freezer and freeze for at least 2 hours or until solid.
In a microwave-safe bowl, combine the chocolate chips and coconut oil. Heat in 30-second intervals, stirring between each, until melted and smooth.
Remove frozen clusters from the freezer. Dip each cluster into the melted chocolate, using a spoon or fork to fully coat.
Return the coated clusters to the parchment-lined sheet and freeze an additional 10-15 minutes until hardened.
Enjoy immediately or store in an airtight container in the freezer for up to a few months. Let them sit out for a couple of minutes before eating for the best texture.
