Ingredients
  

  • 1 cup 4% milkfat, small-curd cottage cheese (we use Good Culture 4% Cottage Cheese)
  • ¾ cup organic strawberries, chopped
  • 3 tablespoons allulose sweetener
  • 1 cup sugar-free, semi-sweet chocolate chips (we use Lily’s Semi-Sweet Chocolate Baking Chips)
  • 1 tablespoon coconut oil

Instructions
 

  • Line a baking sheet with parchment paper to prevent sticking later on.
  • In a food processor, blend the cottage cheese and allulose until completely smooth. The mixture should be creamy without lumps.
  • Add chopped strawberries and pulse briefly to combine. Aim for chunky strawberry pieces scattered throughout for texture.
  • Use a spoon to scoop the mixture into mounds on the prepared baking sheet. Leave space between each cluster.
  • Place the baking sheet in the freezer and freeze for at least 2 hours or until solid.
  • In a microwave-safe bowl, combine the chocolate chips and coconut oil. Heat in 30-second intervals, stirring between each, until melted and smooth.
  • Remove frozen clusters from the freezer. Dip each cluster into the melted chocolate, using a spoon or fork to fully coat.
  • Return the coated clusters to the parchment-lined sheet and freeze an additional 10-15 minutes until hardened.
  • Enjoy immediately or store in an airtight container in the freezer for up to a few months. Let them sit out for a couple of minutes before eating for the best texture.
