Ingredients

  • 1 1/2 cups chopped strawberries
  • 1 cup plain Greek yogurt
  • 1 tbsp honey
  • 1 tsp vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 2 tbsp coconut oil

Instructions

  • In a large bowl, combine the chopped strawberries, Greek yogurt, honey, and vanilla extract until thoroughly mixed.
  • Drop about 2 tablespoons of the mixture onto a parchment-lined baking sheet to form clusters. You should end up with 10 clusters.
  • Freeze the clusters until solid, about 1–2 hours. It’s essential they’re completely frozen before the next step.
  • To melt the chocolate, combine the chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 15- or 30-second increments, stirring in between, until melted and smooth.
  • Remove the frozen clusters from the freezer and carefully dip each into the melted chocolate, ensuring full coverage. Use a spoon if needed and sprinkle with sea salt, if desired.
  • Place the coated clusters back onto the parchment-lined sheet and freeze for a few additional minutes to harden the chocolate.
  • Enjoy immediately or store in the freezer for a quick, refreshing quick chocolate strawberry treat anytime!
