Chunky Monkey Overnight Oats

Ingredients
  

  • 1/3 cup rolled oats (gluten-free, if needed)
  • 2 teaspoons chia seeds
  • Pinch of salt
  • 1-2 teaspoons pure maple syrup
  • 1/2-3/4 cup milk (almond, cashew, oat, or coconut milk)
  • 1/4-1/2 banana diced
  • 1-2 tablespoons peanut butter
  • 1/2-1 tablespoon shredded coconut (unsweetened)
  • 1 teaspoon mini chocolate chips or cacao nibs
  • Optional: Crushed peanuts or extra chocolate chips/cacao nibs for topping

Instructions
 

  • Combine the oats, chia seeds, salt, maple syrup, 1/2 cup milk, banana (use 2-4 tablespoons), peanut butter, coconut, and chocolate chips/cacao nibs in a small bowl or jar.
  • Stir the mixture until everything is evenly combined. Taste and adjust sweetness or milk as desired.
  • Transfer the mixture to an airtight container or mason jar, cover, and refrigerate for at least 30-40 minutes (or overnight).
  • When ready to serve, give the oats a stir and add an extra drizzle of milk if you prefer a slightly thinner consistency.
  • Top with remaining banana, a drizzle of peanut butter, and a sprinkle of shredded coconut and cacao nibs for garnish.
  • Enjoy immediately, or store in the refrigerator for up to 2-3 days.
