- 1/3 cup rolled oats (gluten-free, if needed)
- 2 teaspoons chia seeds
- Pinch of salt
- 1-2 teaspoons pure maple syrup
- 1/2-3/4 cup milk (almond, cashew, oat, or coconut milk)
- 1/4-1/2 banana diced
- 1-2 tablespoons peanut butter
- 1/2-1 tablespoon shredded coconut (unsweetened)
- 1 teaspoon mini chocolate chips or cacao nibs
- Optional: Crushed peanuts or extra chocolate chips/cacao nibs for topping
Combine the oats, chia seeds, salt, maple syrup, 1/2 cup milk, banana (use 2-4 tablespoons), peanut butter, coconut, and chocolate chips/cacao nibs in a small bowl or jar.
Stir the mixture until everything is evenly combined. Taste and adjust sweetness or milk as desired.
Transfer the mixture to an airtight container or mason jar, cover, and refrigerate for at least 30-40 minutes (or overnight).
When ready to serve, give the oats a stir and add an extra drizzle of milk if you prefer a slightly thinner consistency.
Top with remaining banana, a drizzle of peanut butter, and a sprinkle of shredded coconut and cacao nibs for garnish.
Enjoy immediately, or store in the refrigerator for up to 2-3 days.
