Instructions
Preheat your oven to 350°F (175°C). Grease a mini muffin pan or line it with mini muffin liners to prevent sticking.
In a mixing bowl, combine the cottage cheese, rolled oats, applesauce or grated apple, egg, cinnamon, honey or maple syrup (if using), baking powder, and salt. Stir until everything is well-blended.
Let the batter rest for 5 minutes to allow the oats to absorb some moisture for a fluffier texture.
Spoon the mixture evenly into the prepared muffin pan, filling each cup nearly to the top.
Bake for 18–20 minutes, or until the bites are set and the tops are slightly golden.
Cool in the pan for 5 minutes before transferring the bites to a wire rack to fully cool.
