  • 1 cup white whole-wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • cup packed light brown sugar
  • 6 tablespoons unsalted butter, melted
  • 1 large egg
  • 1 ½ teaspoons vanilla extract
  • 1 cup old-fashioned rolled oats
  • ½ cup raisins

Instructions
 

  • Preheat oven to 350°F. Lightly coat a baking sheet with cooking spray or line with parchment paper.
  • In a medium bowl, whisk together the flour, baking powder, cinnamon, and salt.
  • In a large bowl, stir together the brown sugar, melted butter, egg, and vanilla extract until smooth and combined.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Fold in the oats and raisins to distribute evenly throughout the batter.
  • Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart. Each batch should make 12 cookies.
  • Bake for 12-14 minutes or until the edges are golden brown. The centers may still look slightly soft—that's fine!
  • Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  • Repeat with the remaining dough.
