- 1 cup white whole-wheat flour
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- ½ teaspoon salt
- ⅔ cup packed light brown sugar
- 6 tablespoons unsalted butter, melted
- 1 large egg
- 1 ½ teaspoons vanilla extract
- 1 cup old-fashioned rolled oats
- ½ cup raisins
Preheat oven to 350°F. Lightly coat a baking sheet with cooking spray or line with parchment paper.
In a medium bowl, whisk together the flour, baking powder, cinnamon, and salt.
In a large bowl, stir together the brown sugar, melted butter, egg, and vanilla extract until smooth and combined.
Gradually add the dry ingredients to the wet mixture, stirring until just combined.
Fold in the oats and raisins to distribute evenly throughout the batter.
Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart. Each batch should make 12 cookies.
Bake for 12-14 minutes or until the edges are golden brown. The centers may still look slightly soft—that's fine!
Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Repeat with the remaining dough.
