Ingredients
  

  • 2 cups mixed greens
  • 1 cup roasted vegetables, chopped if desired
  • 1 cup roasted tofu
  • 1 tablespoon pumpkin seeds
  • 2 tablespoons Citrus-Lime Vinaigrette

Instructions
 

  • In a bowl or sealable container, layer 2 cups of mixed greens as your base.
  • Add 1 cup of roasted vegetables and 1 cup of roasted tofu on top of the greens.
  • Sprinkle 1 tablespoon of pumpkin seeds over the salad for added crunch.
  • Just before serving, drizzle 2 tablespoons of the Citrus-Lime Vinaigrette over the top and toss to combine.
  • If making ahead, store the salad and dressing separately in the refrigerator for up to 5 days to keep everything fresh.
