- 2 cups mixed greens
- 1 cup roasted vegetables, chopped if desired
- 1 cup roasted tofu
- 1 tablespoon pumpkin seeds
- 2 tablespoons Citrus-Lime Vinaigrette
In a bowl or sealable container, layer 2 cups of mixed greens as your base.
Add 1 cup of roasted vegetables and 1 cup of roasted tofu on top of the greens.
Sprinkle 1 tablespoon of pumpkin seeds over the salad for added crunch.
