Ingredients
  

  • ½ cup full-fat or 2% cottage cheese
  • ¼ cup marinara sauce
  • 1 oz shredded mozzarella cheese, divided
  • ½ teaspoon Italian seasoning
  • 1-2 tablespoons chopped bell pepper
  • 1-2 tablespoons chopped yellow onion
  • 4 turkey pepperoni, chopped
  • Optional: crushed red pepper flakes

Instructions
 

  • In a microwave-safe bowl, combine cottage cheese, marinara, half the mozzarella cheese, and Italian seasoning. Stir to mix.
  • Microwave the mixture for 30 seconds to warm it slightly.
  • Add chopped bell pepper and yellow onion, stirring to evenly incorporate.
  • Top with the remaining mozzarella cheese and chopped turkey pepperoni.
  • Microwave for an additional 30-45 seconds until the cheese is fully melted and bubbly.
  • Sprinkle with crushed red pepper flakes, if desired, for a bit of heat.
  • Serve immediately with mini bell peppers or whole-grain crackers for dipping.

Notes

To customize, omit turkey pepperoni for a vegetarian option or use plant-based cheese for a dairy-free alternative. Best served fresh but can be refrigerated for up to 3 days.
