Cottage Cheese Sweet Potato Bowl

Ingredients
  

  • 2 medium/large sweet potatoes cubed
  • 2 teaspoons olive or avocado oil
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon garlic powder
  • 1/3 teaspoon black pepper
  • 1 pound lean ground beef 90/10 preferred
  • 2-3 tablespoons taco seasoning adjust to taste
  • 2 tablespoons water if needed
  • 1 cup cottage cheese such as Good Culture
  • 1 avocado chopped
  • 4 teaspoons hot honey
  • Hot sauce to taste
  • Pickled onions and/or hot and sweet jalapeños for topping, optional

Instructions
 

  • Preheat your oven to 400°F. Toss the sweet potato cubes in olive oil, salt, garlic powder, and black pepper.
  • Spread the seasoned sweet potatoes evenly on a baking sheet. Roast for 20 minutes, flipping halfway through, until edges are golden and slightly crispy.
  • Meanwhile, heat a skillet over medium-high heat. Add the ground beef, breaking it apart with a spatula. Cook for 6-7 minutes or until fully browned.
  • Add taco seasoning to the beef and stir well. If the mixture seems dry, add 1-2 tablespoons of water for added moisture.
  • Divide the roasted sweet potatoes among four bowls. Add a scoop of cooked ground beef to each.
  • Spoon cottage cheese onto each bowl, followed by chopped avocado. Drizzle with hot honey and a splash of hot sauce to taste. Top with pickled onions or jalapeños if desired.
  • Mix everything together before eating for the most balanced bite!
