- 2 medium/large sweet potatoes cubed
- 2 teaspoons olive or avocado oil
- 1/2 teaspoon sea salt
- 1/2 teaspoon garlic powder
- 1/3 teaspoon black pepper
- 1 pound lean ground beef 90/10 preferred
- 2-3 tablespoons taco seasoning adjust to taste
- 2 tablespoons water if needed
- 1 cup cottage cheese such as Good Culture
- 1 avocado chopped
- 4 teaspoons hot honey
- Hot sauce to taste
- Pickled onions and/or hot and sweet jalapeños for topping, optional
Preheat your oven to 400°F. Toss the sweet potato cubes in olive oil, salt, garlic powder, and black pepper.
Spread the seasoned sweet potatoes evenly on a baking sheet. Roast for 20 minutes, flipping halfway through, until edges are golden and slightly crispy.
Meanwhile, heat a skillet over medium-high heat. Add the ground beef, breaking it apart with a spatula. Cook for 6-7 minutes or until fully browned.
Add taco seasoning to the beef and stir well. If the mixture seems dry, add 1-2 tablespoons of water for added moisture.
Divide the roasted sweet potatoes among four bowls. Add a scoop of cooked ground beef to each.
Spoon cottage cheese onto each bowl, followed by chopped avocado. Drizzle with hot honey and a splash of hot sauce to taste. Top with pickled onions or jalapeños if desired.
