Ingredients

  • 1 cup butter, softened
  • 1 package (8 ounces) cream cheese, softened
  • 2-1/2 cups all-purpose flour
  • 1/2 cup apricot spreadable fruit or seedless raspberry preserves

Instructions

  • In a large bowl, cream butter and cream cheese together until the mixture is light and fluffy.
  • Gradually add flour, mixing just until combined to avoid overhandling the dough.
  • Divide the dough into 4 equal portions. Cover and refrigerate for at least 30 minutes to firm up and make it easier to roll.
  • Roll one portion of dough at a time on a lightly floured surface into a 10x7-1/2 inch rectangle. Trim edges for a neat finish.
  • Cut the rectangle into 2-1/2 inch squares. Place 1/4 teaspoon of preserves near each end of two opposite diagonal corners.
  • Moisten the remaining two corners with water, fold them over the preserves, and press lightly to seal.
  • Arrange the cookies on ungreased baking sheets, leaving a bit of space between them.
  • Bake in a preheated 350°F oven for 12-15 minutes, or until the corners are lightly golden.
  • Cool on the baking sheet for 2-3 minutes before transferring to a wire rack to cool completely.

Notes

Store the cookies in an airtight container for up to 5 days or freeze for up to 3 months. Experiment with various fruit preserves or fillings for unique flavors!
