1/2cupapricot spreadable fruit or seedless raspberry preserves
Instructions
In a large bowl, cream butter and cream cheese together until the mixture is light and fluffy.
Gradually add flour, mixing just until combined to avoid overhandling the dough.
Divide the dough into 4 equal portions. Cover and refrigerate for at least 30 minutes to firm up and make it easier to roll.
Roll one portion of dough at a time on a lightly floured surface into a 10x7-1/2 inch rectangle. Trim edges for a neat finish.
Cut the rectangle into 2-1/2 inch squares. Place 1/4 teaspoon of preserves near each end of two opposite diagonal corners.
Moisten the remaining two corners with water, fold them over the preserves, and press lightly to seal.
Arrange the cookies on ungreased baking sheets, leaving a bit of space between them.
Bake in a preheated 350°F oven for 12-15 minutes, or until the corners are lightly golden.
Cool on the baking sheet for 2-3 minutes before transferring to a wire rack to cool completely.
