2tablespoonsgrated Parmesan cheesedivided
⅓ cup + ¼ cupcupslow sodium chicken brothdivided
¼teaspoonkosher salt
⅛teaspoonblack pepper
6ounceschicken breastcut into 1" cubes
⅓cupuncooked pearl couscous(tri-color)
1tablespoonfresh basilchopped
Instructions
If using the oven, preheat to 375°F. If grilling, preheat the grill to 400°F.
Blend cream cheese, 1 tablespoon Parmesan, garlic, ⅓ cup chicken broth, salt, and pepper until smooth. Use a bullet blender or whisk in a bowl.
Add chicken and couscous to the mixture. Stir gently to coat—the liquid will begin to absorb into the couscous.
Lay out a 12-inch piece of heavy-duty foil. Shape into a pocket or bowl.
Spoon the chicken and couscous mixture into the center of the foil. Seal by folding the edges together and crimping tightly.
Place the foil packet on a baking sheet or directly on the grill, turning burners below to low. Close the oven or grill lid.
Cook for 15 minutes (350°F-375°F) until the chicken is cooked through. Let the packet rest for 5 minutes before opening.
Carefully open the foil to release steam, stir in remaining broth to fluff the couscous, and top with basil and Parmesan to serve.
Notes
Use heavy-duty foil for durability. Let the packet rest for 5 minutes to ensure juicy chicken. Add veggies like zucchini or mushrooms for extra flavor.
