  • 1 ½ cups heavy cream divided
  • 6 ounces semisweet chocolate finely chopped
  • 1 teaspoon vanilla extract
  • Pinch kosher salt

Instructions
 

  • Melt the chocolate: In a heat-safe bowl, combine the chopped chocolate with ½ cup of heavy cream. Gently melt it using a double boiler or microwave in 20-second intervals, stirring after each until smooth. Let the mixture cool to room temperature.
  • Whip the cream: In a separate large bowl, whip the remaining heavy cream with the vanilla extract and pinch of salt. Stop whipping as soon as soft peaks form. Over-whipping can lead to a grainy texture, so watch closely.
  • Lighten the mousse: Stir ⅓ of the whipped cream into the cooled chocolate mixture to lighten it. Then, gently fold in the remaining whipped cream using a rubber spatula, being careful not to deflate the airy texture.
  • Chill: Divide the mousse into small glasses or ramekins and refrigerate for at least 1 hour, or until set. Serve with your choice of toppings like whipped cream, fresh berries, or a sprinkle of flaky sea salt.
